Amaranth Wafers Recipe

Mexico has a wide variety of typical sweets and one of the favorites that most people like is the wafer. They are very attractive because of their color and because they are really addictive when eaten. They are made with wheat flour, water, oil and, depending on the region, with sugar or anise. Currently, it is considered the perfect snack, since it contains very few calories.

Ingredients to make Amaranth Wafers:

  • 60 grams of amaranth flour
  • ½ cup of water (120 milliliters)
  • 1 teaspoon vegetable oil
  • 1 teaspoon vanilla essence or flavoring (optional)
  • metal tortilla press
  • 1 jet of oil to grease
  • Baking paper (optional)

How to make Amaranth Wafers:

  1. To start the amaranth wafer recipe, get the amaranth flour ready.
  2. If you do not get it, you can place the amaranth in a food processor until it is pulverized, although it is recommended that, once processed, you pass the obtained flour through a sieve to make it even finer.
  3. In a bowl, mix the water with the vanilla extract or a flavoring of your choice, in case you want to add that extra flavor or sweetness; if you want to sweeten the recipe try with stevia.
  4. Tip: in some places they sell amaranth sweetened with honey, you can use this if you prefer.
  5. Add the amaranth flour little by little and mix with a fork or balloon whisk until the ingredients are completely integrated.
  6. Once the mixture is ready, add a teaspoon of oil and mix again. Optionally you can add a few drops of food coloring of your favorite color.
  7. Tip: if you want to enjoy some delicious amaranth wafers with chocolate, you can add cocoa powder (preferably pure) or grated chocolate.
  8. Prepare the tortilla press so that it is placed on the grill or stove with a medium temperature.
  9. Alongside, cut two circles of baking paper the size of the press. When the press has heated up, lay down one of the paper circles and grease it with oil.
  10.  Then, immediately place a tablespoon of the amaranth flour mixture, put the other circle of paper on top (also greased), close the press carefully without pressing too hard and let it cook for a minute and a half.
  11. The temperature must be constant and must not exceed the average so that the amaranth wafers do not burn.
  12. After the time, open the press with the help of a thermal glove, remove the paper and the cooked wafer.
  13. Repeat the process until you finish with your mixture, yes, every time you repeat, remember to grease the paper.
  14. If you don’t have a tortilla press, you can make amaranth wafers in a pan using the same paper trick.
  15. To avoid burning yourself, we recommend oiling the paper outside the pan, place the dough, the second circle of paper on top and press with the base of a glass, for example, to spread the mixture.
  16.  Once spread out, carefully place the paper with the dough inside in the hot pan.
  17. Tip: if you prefer, you can skip the baking paper and directly grease the press, although using the paper will be more practical when it comes to removing the wafers.
  18. To better shape your amaranth wafers, cut them with the help of a cookie cutter or something circular that helps you mark the circle and cut with kitchen scissors.
  19. In a few minutes you will have your amaranth wafers ready for the afternoon snack. As you can see, it is a gluten-free snack, healthy and perfect for the whole family.

How to make flavored amaranth wafers

  1. With the quantities mentioned, you can get 10 to 12 small-sized wafers of amaranth.
  2. If you want to make more, just multiply the ingredients.
  3. There are many flavor options for making this amaranth wafer recipe.
  4. You can leave the natural flavor or add other flavors such as cinnamon, condensed milk, and chocolate and, if you can get them, there are also artificial flavors such as cotton candy or chewing gum, among others, although you can also opt for more natural flavors such as taro or strawberry.
  5. You can also combine amaranth flour with almond or walnut flour, I assure you that they will be delicious.
  6. Accompany the amaranth wafers with honey, cream cheese and some seeds such as chopped walnuts, green nuggets or your favorite toppings.
