Amaranth Atole

Ingredients to make Amaranth Atole:

  1. 1 cup of amaranth seeds
  2. 1 liter of whole milk
  3. 150 grams of Sugar (¾ cup)
  4. 2 units of cinnamon sticks

How to make Amaranth Atole:

  • The first step to make this amaranth drink is to prepare all the ingredients.
  • Add the milk, sugar and cinnamon sticks to a deep pot and heat over medium heat.
  • Once the milk has reached a boil, add the amaranth seeds and reduce the heat to a simmer. Let keep for about 10 minutes and turn off the heat.
  • Take the preparation to a bowl and let cool, once cold, process the mixture so that all the ingredients are integrated and you obtain a drink without lumps.
  • Bring the amaranth drink to a simmer for 10 more minutes, or until it thickens. This drink can be consumed hot or cold, as you wish.
  • Serve the amaranth atole sprinkling a little cinnamon powder to taste as shown in the photograph and enjoy!
