Almond Panellets Recipe

Almond panellets are rich, sweet, tender and juicy, with a delicious nutty flavor. These sweets are prepared for All Saints’ Day and, although they are made in various flavors or other nuts, the most typical are almond or pine nut panellets. The dough for the almond flour or ground almond panellets can be prepared in advance, kept in the fridge for a couple of days and made the day they are to be eaten, no problem.

Ingredients to make Almond Panellets:

  • 250 grams of ground almonds
  • 200 grams of sugar (1 cup)
  • 70 grams of cooked potato
  • 2 eggs
  • 1 lemon zest
  • 1 package of almond granules

How to make Almond Panellets:

  1. To start with the almond panellets recipe, we first prepare all the ingredients for the panellets with almond flour.
  2. Cook the potato with the skin on or cook it in the microwave. When it is cooked, let it cool and mash it with a fork.
  3. In a bowl we put the ground almonds, the sugar, the piece of crushed potato and the lemon zest. Beat an egg and add a couple of tablespoons to the bowl.
  4. We remove all the marzipan for panellets until everything is well integrated, and if it is very dry we will add one more tablespoon of egg.
  5. You can also add only the white but it must be a juicy mass.
  6. Wrap the panellets dough in film in the form of a roll and leave it in the fridge for a couple of hours or until the next day.
  7. Put the raw almond granules on a plate. We make balls with the dough and we batter them until they are well covered with almonds.
  8. We will be putting the almond panellets on an oven tray lined with parchment or parchment paper. The almond and potato panellets are almost here!
  9. We beat the other egg and with the help of a kitchen brush we will paint all the almond panellets. Bake at 180ºCuntil golden.
