With the festive season approaching, the nougat begins to be present in the minds of many people who take advantage of this time of year to enjoy it. For this reason, and considering that there is nothing better than a homemade nougat, we are going to tell you below how nougat is made and what ingredients you need.
This time we will talk about how to make one of the great classics: hard nougat or almond nougat. What must be taken into account is that the main difference between a good hard nougat and another is the crunchy texture it can achieve, which is achieved in a combination of toasted almonds and caramelized honey. The ingredients that are required to make this nougat are very basic.
Ingredients to make almond nougat:
- 2 wafer sheets
- 250 grams of raw Marcona almonds
- 1 egg white
- 130 grams of honey
- 100 grams of sugar (½ cup)
How to make almond nougat:
- Once we have all the ingredients, the first step to make the nougat will be to heat the honey in a saucepan over low heat until it is liquid and the water it contained has evaporated.
- Then, we are going to add the sugar to the mixture, always stirring with a wooden spoon or a spatula slowly but continuously.
- We are going to continue stirring until we reach a homogeneous texture similar to that of caramel. When that happens, we are going to put the mixture aside to use it again later.
- The second step will be to beat the egg white very vigorously until it becomes thick. When the expected consistency has been obtained, it will be added to the previous mixture. It must be borne in mind that it is the egg white that gives the nougat that characteristic color.
- Now, we are going to work with the almonds. The best type of almond to make a hard nougat is the marcona.
- It is not recommended to buy them roasted because they may contain salt. It is always best if they are raw and place them at home in a frying pan or in the oven until the surface is well toasted.
- One of the most important tricks so that you have an excellent nougat is to place the already toasted almonds in a mold and sprinkle the previous mixture on top until everything is well combined.
- The recipe must be mixed vigorously with the toasted almonds to achieve the uniform paste of the nougat.
- To finish, with the mixture well beaten we are going to pour it into a mold on a wafer sheet in the bottom and lined with baking paper.
- We extend the mixture looking for the thickness that we would like to achieve in our nougat and place a new wafer on top.
- The last step will be to let it rest well in the mold, removing the nougat when it is already cold and cutting it very carefully to obtain the desired shape.
