Ingredients to make Almond Rice Pudding:

  • 800 milliliters of almond milk
  • ¾ cup of Rice
  • 6 tablespoons of Sugar
  • 1 dessert spoon of Butter or oil
  • 1 Cinnamon stick
  • 1 unit of lemon peel
  • 1 pinch of salt
  • Ground cinnamon (optional)

How to make Almond Rice Pudding:

  1. Preparing this delicious almond rice puddingis very easy! We will start by washing the rice grains. In this case I am using risotto rice, which is one of the creamiest varieties.
  2. Next, place a pot with the rice, the almond milk, the cinnamon stick and the lemon zest, and heat over medium heat.
  3. Tip: If you do not want to use almond milk you can use any other type of vegetable milk.
  4. When the vegan rice pudding is boiling, we stir non-stop for 20 minutesso that the rice is made, it is creamy and it does not burn.
  5. Taste the vegan rice pudding and, if it is already cooked, turn off the heat. Add the sugar, salt and butter or oil, mix well and remove the cinnamon stick and lemon peel.
  6. Let the almond rice pudding cool and then transfer it to a bowl or a platter. Then we put it in the fridgefor a minimum of 2 hours
