Almond langoustines recipe

Ingredients to make almond langoustines:

  • 15 medium scampi
  • 40 toasted almonds
  • 2 garlic cloves
  • 5 egg yolks
  • 5 dl of olive oil
  • Salt

 How to make almond langoustines:

  1. Peel and crush the garlic in a mortar; then add the egg yolks and a pinch of salt (everything is mixed well with a hand blender).
  2. Next, add the olive oil, little by little, in a fine trickle without stopping stirring. When it is ready, set aside.
  3. Cut in half and roast on a hot grill or griddle.
  4. When they are done, place them in a baking dish with the meat side up, covering them with the previously prepared sauce.
  5. Sprinkle the chopped almonds on top and it is put to gratin in the oven.
  6. It is served very hot; the dish can be decorated with lettuce leaves and tomato flowers.
