Ingredients to make almond langoustines:
- 15 medium scampi
- 40 toasted almonds
- 2 garlic cloves
- 5 egg yolks
- 5 dl of olive oil
- Salt
How to make almond langoustines:
- Peel and crush the garlic in a mortar; then add the egg yolks and a pinch of salt (everything is mixed well with a hand blender).
- Next, add the olive oil, little by little, in a fine trickle without stopping stirring. When it is ready, set aside.
- Cut in half and roast on a hot grill or griddle.
- When they are done, place them in a baking dish with the meat side up, covering them with the previously prepared sauce.
- Sprinkle the chopped almonds on top and it is put to gratin in the oven.
- It is served very hot; the dish can be decorated with lettuce leaves and tomato flowers.
