Ingredients to make Almond and orange cake:
- 3 units of Oranges (the zest)
- 275 grams of ground almonds or almond flour
- 6 units of Eggs
- 1 teaspoon of Yeast
- 100 grams of grated coconut (1 cup)
- 100 grams of honey
- 100 grams of brown sugar
- 125 milliliters of mild olive oil
- for the syrup
- 3 units of Oranges (the juice)
- 2 tablespoons of honey
How to make Almond and orange cake
- Before getting down to work, preheat the oven to 180ºC. Then, we take a 22 cm diameter mold and paint it with olive oil so that the cake does not stick when baking
- Now yes, let’s start! We take a bowl and beat the sugar, honey and olive oil. Once integrated, add the eggsone by one. Remember that until one egg is completely integrated, we do not incorporate the next one.
- Add the rest of the ingredients (ground almonds, orange zest yeast and grated coconut) and mix with a spatula, without beating
- Let’s pour the mixture into the mold that we greased at the beginning and bake the almond cakefor approximately 1 hour. It is important that we check with a toothpick if the cake is ready, since depending on the power of our oven it may take more or less.
- Meanwhile, we can go preparing the syrup. To do this, we heat the orange juice together with the honey. We bring the preparation to a boil for 5 minutes and reserve.
- When the cake is ready, we remove it from the oven and let it cool for 10 minutes inside the mold. After this time, we unmold and bathe it with the previous syrup.
- And ready! We already have our almond and orange cakeready to serve. We can decorate it with orange slices or segments, whatever we like best, and accompany it with a delicious coffee.
