Ingredients to make Alicante Nougat:
- 1 glass of sugar
- 1 glass of honey
- 250 grams of almonds (raw or toasted)
- 2 egg whites
- Baking paper or wafers
How to make Alicante Nougat:
- Put the almonds in the oven to toast and, if you already have them toasted, skip this step. Be careful not to toast them more than necessary, especially if you do it in the oven.
- Heat the honey in a saucepan for 5 minutes over medium heat, but stir often. Then, add the sugar, stirring constantly so that it dissolves and integrates with the honey.
- Don’t let it caramelize, it should just have a syrupy texture.
- Prepare a mold to make the Alicante nougat.
- Tip: You can use a simple container with a lid, such as the one that appears in the photograph.
- Put out the fire where you have the honey with sugar so that it does not go away.
- Do not let it cool too much, so beat the two whites at once until they reach stiff peaks.
- Add the honey and sugar syrup to the egg whites, but do it very slowly. Go stopping and stirring in an enveloping way and continue until you finish pouring the mixture.
- Take this mixture to a wide casserole and add the toasted almonds, stir constantly slowly, over low heat. Keep them cooking for approximately 8 minutes, but do not stop stirring so that this mixture does not caramelize or darken.
- Pour the mixture with almonds into the mold and crush it. To do this, you can use wafers or a baking paper template cut to size.
- Crush gently, cover and store in the fridge for at least 24 hours. Take out the container and you will have your own Alicante nougat ready!
