Alfajores recipe without animal fat

Alfajores are one of the most consumed sweets nationwide in Argentina. However, the supply of alfajores suitable for those who decide to eat a diet without animal products is quite scarce. In response to that demand, we decided to share this recipe for alfajores without animal fat. On this occasion, you can make them filled with dulce de leche if you are vegetarian or just looking for a recipe low in saturated fat, or with peanut butter, if you want to eat vegan alfajores.

Ingredients to make Alfajores without animal fat:

  • 120 grams of flour 0000
  • 20 grams of corn starch
  • 10 grams of bitter cocoa
  • 25 grams of sugar
  • 1 teaspoon of honey
  • 50 cubic centimeters of oil
  • 1 teaspoon of baking powder
  • ½ orange or lemon (zest and juice)
  • 1 Teaspoon vanilla extract
  • For the filling:
  • 150 grams of dulce de leche or peanut butter
  • For the coverage:
  • 50 grams of chocolate to melt

How to make Alfajores without animal fat:

  1. To start with the recipe for alfajores without animal fat, first mix the oil with the lemon or orange zest and the sugar.
  2.  If you are not vegan, you can add a teaspoon of honey, it will provide your alfajores with more moisture.
  3.  On the contrary, avoid it. You can also replace the oil with margarine or coconut, but in this way the quality of the fats will be much healthier.
  4. Tip: as we have previously mentioned, these sweets are suitable for vegetarians.
  5. Mix the flour with the baking powder and a pinch of salt. For confectionery it is convenient to use 0000 flour, but if you have 000 flour it will also be perfect.
  6. If you wish, add a heaping tablespoon of cocoa to flavor the tapas of your alfajores. You can use sweet or bitter cocoa for a more intense flavor.
  7. Add the remaining halfand, if necessary, add more moisture to your dough with a little water or orange juice.
  8. When you have a bun, take it to the clean and floured counter.
  9. Arrange your dough between two separators or plastic wrapso that, when stretched, it does not stick to the counter or the palate.
  10. Stretch the doughty about 5 millimeters high.
  11. Remove the separator or film above and choose a cutter for your alfajores of the diameter you want.
  12. In this case, we have used a 2-inch diameter jar lid. Next, cut off the caps, reattach the remaining dough, and repeat until all of it is used.
  13. Arrange the lids in a roasting pan previously greased with oil and cook them in the preheated oven at 180ºC for about 10 minutes.
  14. After time, let them cool or warm and remove them carefully, as they are very fragile. Arrange them on a rack to cool.
  15. When they are cold, fill the caps with the chosen ingredient. As we mentioned at the beginning of the recipe, you can choose between peanut butter or dulce de leche, according to your tastes and preferences, depending on whether or not you consume products of animal origin.
  16. Tip: you can also fill your alfajores with chocolate mousse or lemon cream.
  17. On the other hand, melt the chocolate to bathe the alfajores without animal fat or cookies without animal fat.
  18. This step is not necessary, but optional, since you can eat your alfajores without a bath. Prepare them in the microwave at minimum power for 30 seconds, stirring each time so that it does not burn.
  19. If you don’t have a microwave, brew in a bain-marie.
  20. Carefully dip the alfajores into the melted chocolate and turn to cover all parts.
  21. Arrange the bathed alfajores on a rack again so that the chocolate tempers.
  22. Let’s eat the delicious alfajores without animal fat!
