Ingredients to make Scallops Gratin in Albariño:
- 8 u scallop
- 2 units onion
- 50 gr ham
- 1/2 tablespoon sweet paprika
- 1/2 l Albariño wine
- Bread crumbs
- Salt
- Oil
How to make Albariño Gratin Scallops:
- Clean the scallops well, leaving the meat and coral inside the shell.
- Sauté the peeled and finely chopped onion together with the oil and the ham.
- When it takes color, add the paprika.
- Allow to cook again and add the wine.
- Reduce by half and remove from heat.
- Season the scallops and cover them with the onion and ham.
- Finally sprinkle the breadcrumbs and gratin until the scallop is cooked.
- It should not be done much, the ideal is that it is juicy.
