Aguaymanto salad with chicken recipe

Aguaymanto is an exotic native fruit from the Peruvian Andes. A fruit that has multiple beneficial properties for the body. It is rich in vitamins A, B and C and I would personally say that it has a bittersweet flavor leaving a quite pleasant aroma on the palate. So, today, I bring you a delicious fresh aguaymanto salad accompanied by chicken and apple. Enjoy it a lot!

Ingredients to make golden berry salad with chicken:

  • 1 unit of chicken breast
  • 150 grams of Aguaymanto
  • 1 unit of green apple
  • 1 branch of Celery
  • 1 bunch of fresh basil
  • 1 jet of olive oil
  • 2 dessert spoons of Mustard
  • 1 dessert spoon of honey

How to make Golden Gooseberry Salad with Chicken:

The first thing we must do is chop the chicken into cubes or cubes and marinate it in a mixture of mustard and honey for 1/2 hour. Then, with the same marinade mixture, we roast them (preventing them from burning) and reserve.

In a separate bowl, mix the chopped onion with the julienned celery and the diced or diced apples. Season with olive oil. Finally, add the chicken, the basil leaves (chopped and washed) and the chopped aguaymanto.

Prepare vinaigrette with a finely chopped green pepper, half a chopped onion, finely chopped green olives and half a hard- boiled egg, also chopped. Add the juice of a lemon, a pinch of apple cider vinegar and stir well so that all the aromas are impregnated.

We add 5 tablespoons of mayonnaise, 1 teaspoon of sugar and a few drops of Tabasco if we want to add a touch of spice. Mix until all the ingredients are well integrated with the sauce. Dress the aguaymanto and chicken salad with this vinaigrette and serve.
