Ingredients to make Cod Salad:
- 2 potatoes
- 1 head of lettuce
- 300 g of cod in a loin
- 1 onion
- 1 green bell pepper
- 2 garlic cloves
- 1 chili pepper
- 4 tablespoons cider vinegar
- 1 wine glass of olive oil
- 1 tablespoon of pepper pulp
- Salt
How to make Cod Salad:
Desalt the cod. Cut the green pepper and onion julienne. Put them to marinate with salt, crushed garlic, chili, oil and vinegar overnight. Reserve the liquid, which will later be used to dress the salad.
Put the cod in cold water, bring it to the fire and when it starts to boil, remove it from the water and drain it. Remove the skins and bones and separate it into flakes. Cook the potatoes in boiling salted water, peel and cut into not too thick slices.
Wash the lettuce and cut it into julienne strips. Place a bottom of lettuce on the plate and a few slices of potato on it, put the cod flakes on top and the drained onion and pepper julienne. Mix the macerating liquid with a tablespoon of chorizo pepper pulp, adjust the salt level and sprinkle the salad.
