Ingredients to make Roman soup with pasta and vegetables:
- For 4 people:
- 1 liter of water
- 100g red onion
- 2 stalks of celery
- 100g carrot
- 1 chopped turnip
- 1 tablespoon chopped basil
- 1 tablespoon minced oregano
- 1 clove garlic
- 60 grams of pasta for soup
- 2 teaspoons olive oil
How to make Roman soup with pasta and vegetables:
- Julienne (strips) the onion; the celery, we cut it into slices, like the carrot and the garlic; turnip, chop it into small squares.
- Sauté them for a few moments in a pan with water and cover them with a liter of water, leaving them to cook for half an hour.
- After that half hour, we take out the vegetables and pass them through a food mill, add the pasta for soups, basil and oregano, along with a pinch of salt.
- Let the whole thing boil for about 10 minutes.
