Ingredients to make vegan Vichyssoise:
- 250 grams of leek, leek or long onion
- 2 cloves of garlic
- 60 milliliters of olive oil
- 3 units of Potatoes
- 1 pinch of salt
- 1 pinch of pepper
How to make vegan Vichyssoise:
- Before making this recipe, the first step is to get all the ingredients ready.
- In a pot with olive oil, fry the sliced leek and the garlic finely until soft.
- Add the potatoes cut into small cubes and fry, season with salt and pepper.
- Add water and cook over low heat for 30 minutes until the potatoes are soft. Then, blend the vichyssoise light without cream and rectify the flavor with salt and pepper.
- Serve the vegan vichyssoise cold and decorate by sprinkling a little onion and fried leek. If you prefer it vegetarian you can add a little Parmesan cheese.
