Ingredients to make Quinoa and Chicken Salad:

  • 2 chicken breasts
  • 1 cup of quinoa (about 150 g)
  • 3 bay leaves
  • 100 grams of cooked corn
  • 50 grams of pomegranate seeds
  • 1 pinch of salt
  • 1 pinch of olive oil
  • 1 pinch of balsamic vinegar

How to make Quinoa Chicken Salad:

Put the chicken breasts in a pot and cover them with water, add a little salt and two bay leaves. Cook chicken for 30 minutes over medium-low heat or until breasts are cooked through and tender.

In another pot, cook the quinoa. To do this, look at the package to see the ratio of cooking water. In ours it is one part of quinoa for three of water. Put the water to boil with a little salt and a bay leaf. When it starts to boil, add the quinoa. Look on the package, too, for the cooking time of the quinoa. In ours, 10 minutes of cooking and 5 minutes of rest are indicated. The quinoa will have puffed up and absorbed all the water. Booking.

Once the breasts are cooked, drain them and cut them with the help of a knife. You can fillet them finely or cut them into thicker but not too large pieces to make the quinoa and chicken salad to your liking.

Put the quinoa in a bowl together with the chicken pieces, the corn and the pomegranate grains. Add a little salt and oil. Stir well and serve with a splash of balsamic vinegar. If you want to make the quinoa, chicken and avocado salad it will also be delicious, you just have to peel and cut an avocado.

Tip: You can substitute the pomegranate for another type of fruit, such as peach, pineapple, orange, watermelon or the one you like the most.

If you prefer to decorate the salad, we suggest you mix the quinoa with the cooked corn. Put chicken strips on top and crown the center with the pomegranate seeds. Finally, decorate with a splash of balsamic vinegar.
