Quarter of an hour soup recipe

Ingredients to make Soup at quarter of an hour:

  • 1/4 kilo of hake
  • 300 grams of clams
  • 1/4 kilo of prawns
  • 50 grams of ham cut into cubes
  • 100 grams of peas
  • 1 small onion
  • 2 ripe red tomatoes
  • 4 tablespoons of rice
  • 1 sprig of parsley
  • 1 boiled egg
  • 2 tablespoons olive oil
  • sweet paprika
  • Salt

How to make quarter hour soup:

  1. Wash the clams and leave them to soak in salted water. It would be convenient to leave them for 2 or 3 hours, changing the water to ensure that the sand is removed. Once clean, prepare a frying pan with a little oil and fry them at high temperature until they open. We remove the shells and reserve them with the juice they have released.
  2. Peel the prawns (we save the shells for another occasion)
  3. Heat the oil in a saucepan and add the chopped onion and garlic. When they begin to be transparent, add the pepper very small, the ham in small cubes, the sherry and sauté. Cover with the broth and cook for about 5 minutes. We chop the hake, the prawns and add them together with the clams with their juice and wait another 5 minutes. Serve hot with cooked rice, chopped boiled egg and parsley.
