Ingredients to make Pink Fish Soup:
- 1 pc onion
- 1 1/2 Kg water
- 1/2 Kg pink salmon
- 1 pc fish broth
- 1 glass white wine
- 3 pcs potatoes
- 2 ram celery
- 3 tsp. cornstarch
- 250 g heavy cream
- 2 cc filled with tomato puree
How to make Pink Fish Soup:
- Boil the fish in the water with the chosen broth, the onion, the potatoes and the celery sticks.
- When the vegetables are tender, remove the saucepan from the heat, let cool slightly and blend the fish and vegetables with some of the broth.
- Return everything to the saucepan, add the tomato puree, the milk cream, taste and correct the seasoning.
- Heat well and before it breaks the boil add the starch dissolved in the wine and stir until thick.
- Remove, add more wine or broth if you prefer and season, accentuating the flavor of the pepper.
