Potato and leek soup recipe

Ingredients to make Potato and Leek Soup:

  • 225g potatoes, peeled and diced 2cm
  • 850 ml of vegetable broth
  • 1 chopped onion
  • 3 leeks in rings
  • Salt
  • Pepper
  • 150 ml of liquid cream (optional)
  • 2 tablespoons chives in thin rings, to garnish
  • 50g of butter

How to make Potato and Leek Soup:

  1. Melt the butter in a saucepan over medium heat, add the vegetables and sauté for 2-3 minutes until tender but not brown. Pour in broth, bring to a boil, lower heat and cook, covered, 15 minutes.
  2. Remove the saucepan from the heat and blend everything with the blender or food processor.
  3. Heat the soup again, season with salt and pepper and pour into preheated bowls. If you wish, decorate it with a spiral of cream. Garnish with chives.
