Ingredients to make Potato and Leek Soup:
- 225g potatoes, peeled and diced 2cm
- 850 ml of vegetable broth
- 1 chopped onion
- 3 leeks in rings
- Salt
- Pepper
- 150 ml of liquid cream (optional)
- 2 tablespoons chives in thin rings, to garnish
- 50g of butter
How to make Potato and Leek Soup:
- Melt the butter in a saucepan over medium heat, add the vegetables and sauté for 2-3 minutes until tender but not brown. Pour in broth, bring to a boil, lower heat and cook, covered, 15 minutes.
- Remove the saucepan from the heat and blend everything with the blender or food processor.
- Heat the soup again, season with salt and pepper and pour into preheated bowls. If you wish, decorate it with a spiral of cream. Garnish with chives.
