Strawberry Salmorejo Recipe

Within the list of cold soups, the Andalusian salmorejo is one of my favorites. This wonderful creation, typical of southern Spain, is the best remedy against the summer heat.

Well, to give an original touch to the traditional recipe for salmorejo from Córdoba, in the recipe that we show you next, we will prepare a strawberry salmorejo. So if what you want is to learn how to make homemade salmorejo, follow the instructions carefully (which are super easy) and count down the minutes to enjoy a delicious and very refreshing dish, based on tomato, garlic, oil and strawberries!!

Ingredients to make Strawberry Salmorejo:

  1. 1 kilogram of ripe tomato
  2. 300 grams of Strawberries
  3. ½ glass of olive oil
  4. 1 splash of apple cider vinegar (optional)
  5. 1 pinch of salt
  6. 3 slices of bread
  7. 1 pinch of sugar

How to make Strawberry Salmorejo:

  • We start by placing all the ingredients on the work table. Wash the tomatoes and strawberries very well, removing the part with the green leaves from the latter. Reserve some whole strawberries for the decoration of our cold salmorejo soup.
  • We start by peeling and chopping the tomatoes a little. We also chop the strawberries and garlic. When we have it, we place all this in the blender glass together with the oil, the vinegar and the chopped bread. Blend everything until a homogeneous mixture is obtained.
  • You can use any type of bread with crumbs, whether it is country bread or the classic sliced ​​bread.
  • Check the seasoning and correct it by adding salt and sugar to level the acidity of the tomatoes. Then add water to taste until the strawberry salmorejo has the texture you prefer, more or less thick.
  • Correct the flavor again with salt and pepper if necessary.
  • To finish, we pass our strawberry soup through a strainer to remove any lumps that may have remained. Then, reserve in the fridge until serving time.
  • Strawberry salmorejo can be served as an appetizer in shots or as a starter in larger portions. As you can see, it is a very simple recipe and perfect for hot days, since it is a super refreshing cold soup.
  • You can decorate with a boiled egg, crispy ham, croutons or just a few slices of fresh strawberry. And if you dare to combine more flavors, be sure to try the strawberry salmorejo with beetroot, super red and super good!
