Ingredients to make original peasant soup:
- 2 tablespoons vegetable oil
- 2 cups of sweet corn kernels
- 1/2 medium onion finely chopped
- 1 finely minced garlic clove
- 1 small bunch of squash blossoms, washed and roughly chopped
- 1 large tomato, seeded and roughly chopped
- 6 tablespoons chopped fresh coriander
- 3 medium zucchini cut into thin julienne strips
- 1 large poblano pepper roasted, peeled, deveined, cored and cut into thin strips
- 125 g of fresh cheese crumbled
- 1 ½ liters of chicken broth
How to make Original Peasant Soup:
- The corn kernels are fried in the oil for 8 minutes.
- Add the onion and fry until transparent, then the garlic and chicken broth, letting it cook until the corn kernels are tender.
- Add the rest of the ingredients and let it boil, taking care that the zucchini do not cook too much.
- The soup is served with some sprinkled cheese.
