Ingredients to make Milanese Soup:
- For 4 people:
- 250 grams of white beans
- 1 carrot
- 1 zucchini
- 2 potatoes
- 1 leek
- 1 onion
- 100 grams of tomato
- 1 piece of white cabbage
- 50 grams of margarine
- 50 grams of pancetta
- 1 meat extract tablet
- 100 grams of pasta for soup
- 50 grams of grated Parmesan cheese
- Salt
How to make Milanese Soup:
- Soak the white beans in cold water the night before.
- In a casserole the margarine, the finely chopped bacon, and add the vegetables chopped into fine strips (julienne).
- Let the vegetables fry a little with the pan covered, then add the peeled tomatoes, without seeds, cut into small pieces, season with a little salt and cover with cold water, leaving to cook over low heat for about an hour and a half.
- Fifteen minutes before serving, add the pasta and the meat extract.
- If the soup is too dry, add a little more hot water.
- Before removing it from the heat, at the time of serving, we add a good spoonful of Parmesan cheese.
