Seafood broth is a soup that, served piping hot, lifts anyone’s spirits. Don’t be surprised by the number of steps, the recipe for this seafood soup is very easy, go ahead and prepare it and serve it as a starter at a party or special celebration.

Ingredients to make Seafood Broth:

  1. 5 envelopes of Mojarra or Big catfish
  2. ½ kilogram of Raw Shrimp
  3. 4 Mojarra farmhouse fillets
  4. ½ kilogram of Assorted Seafood
  5. 4 units of Tomatoes
  6. 1 unit of Onion
  7. 1 bunch of coriander
  8. 2 units of Green Chile
  9. 4 units of Carrot
  10. 1 unit of Celery
  11. 1 unit of bell pepper
  12. 1 bottle of oil

How to make Seafood Broth:

  • Boil approximately 4 liters of water in a pot, with a whole head of garlic, half a sprig of Celery, a piece of onion and salt for 10 minutes and then add the fish heads.
  • Let the heads boil and remove them from the pot when they are about to fall apart. This is done to flavor the seafood broth.
  • Once the heads are removed, the raw shrimp is added to the pot. Leave it until it boils and the water takes on a reddish color, then remove, peel and set aside.
  • On the other hand, celery and carrots are cooked. Reserve the cooking water.
  • Add the shells that were removed from the shrimp and the cooked fish heads to the blender along with the cooking water, in this step also add the celery and carrot. Blend until you get a more or less uniform cream. The head of garlic is removed from the pot.
  • Pour the liquefied mixture back into the pot with the help of a strainer to avoid the bones and shell that have not been ground. Repeat the process if necessary.
  • Add the carrot and celery broth, which we previously reserved, so that they cook together with the seafood mixture
  • Now, to prepare the sauce for our seafood broth, fry the bell pepper, green chili and onion in a pan until the latter has crystallized. Then add the chopped tomato until it releases its juice and finally add the ground tomato. Of the 4 tomatoes in the recipe, 3 will be used chopped and one ground or blended. The bell pepper is also known as paprika or pepper and the green chili as chili.
  • Next, pour this mixture into the pot and let it boil for approximately 10 minutes. Then add the cilantro and leave it for 3 more minutes to finally add the fish fillet cut into pieces and the shrimp and let it boil for 5 minutes.
