Ingredients to make Sausage and Chicken Soup:
- 700g potatoes
- 2 carrots
- 2 small onions
- 2 large sausages of your choice
- 1 piece of chicken
- 1 can of sweet corn
- 3 eggs
- Water
- Salt
- Cilantro
- 1 piece of edam cheese
How to make Sausage and Chicken Soup:
- Saute the sliced onion and sausage in a little oil.
- Add the potatoes, the carrot, the drained corn and the piece of chicken. Stir.
- Add water, chopped cilantro and a tablespoon of salt (or to your liking).
- Cook the chicken and sausage broth for about 20 minutes. Then you take out the piece of chicken, cut it into pieces to remove the bone, and add it back to the soup. Taste the salt and correct if necessary.
- Add the lightly beaten eggs with a little salt. Stir the sausage and chicken soup and turn off the heat.
- I love this last step. Cut cubes of cheese of your choice (mine Edam) and a little more chopped cilantro. To then serve the chicken and spun egg soup and let the cheese melt and the fresh cilantro release its aroma… A chicken and sausage soup that no one in my house or the kids can resist!
