In this recipe we will make a simple and delicious chicken and vegetable broth. Bearing in mind that vegetables are not children’s favorite foods, we are going to make a broth by adding some diced potatoes to make it more appetizing for them and get them to consume it with more pleasure. Likewise, this broth is ideal for reducing general discomfort and combating low temperatures
Ingredients to make Vegetable and Chicken Broth:
- 1 unit of chicken breast
- 4 units of Potatoes
- 120 grams of green beans
- 80 grams of Celery
- 1 unit of Carrot
- 1 pinch of Parsley
- 120 grams of peas or peas
- 1 pinch of thyme
- 1 unit of chicken bones
- 1 pinch of garlic paste
- 1 pinch of salt
- 1 pinch of pepper
- 1 pinch of oregano
- 1 teaspoon of olive oil
- 1 unit of white onion
How to make Chicken and Vegetable Broth:
- The first step to make our recipe is to get all the ingredients for our chicken broth ready.
- To start with the preparation of the basic vegetable broth, we are going to bring a pot to medium heat with a little oil. Then, we add the white onion and half of the carrot in large pieces as seen in the photograph.
- Add the celery in pieces, salt and pepper to taste.
- Then we are going to add the chicken bones and let these ingredients sauté for a few more minutes.
- Cover with enough water, add bay leaf and thyme. Let stand for 30 minutes and remove from heat. Now we have our base broth ready, let’s continue with the recipe.
- With the help of a strainer, remove the ingredients that were in the basic broth, thus removing the bones and vegetables that flavored our recipe. Take this broth to a deep pot and add the peeled potatoes so that we can continue cooking the vegetable soup.
- Once we observe that the broth is about to boil, add the cut vegetables (beans, peas, carrots) and aromatize with a little garlic paste, salt and pepper. Leave preserves for about 15 minutes or until the vegetables are soft. Lower to a simmer and let it conserve.
- Take a skillet over medium heat with a little olive oil and sauté the chicken breast with a little salt and pepper to taste. Once we see that the breast is sautéed, remove it from the heat and we are ready to serve our chicken broth.
