Ingredients to make Lettuce Gazpacho with Cucumbers:
- 1 lettuce
- 2 natural yogurts
- 3 pickled cucumbers
- 2 hardboiled eggs
- 1 glass of very cold water
- 100 grams of breadcrumbs
- 2 tablespoons balsamic vinegar
- 6 tablespoons olive oil
- Salt
- Pepper
How to make Lettuce Gazpacho with Cucumbers:
- Soak the breadcrumbs in very cold water.
- Place all the ingredients (lettuce, yoghurt, pickles, boiled egg) in the blender jug with the glass of water and the breadcrumbs and blend them until they form a homogeneous cream.
- Season with salt and pepper and dress with a splash of oil and a few drops of vinegar.
- Season with salt and chill in the refrigerator for 30 minutes before serving.
