Ingredients to make Lentil and Potato Soup:
- 250 grams of lentils
- 100 grams of onion
- A garlic clove
- 400 grams of potatoes
- 4 slices of soup bread
- 8 tablespoons of virgin olive oil
- a sprig of parsley
- Salt
- Pepper
How to make Potato Lentil Soup:
- Soak the lentils the night before. Peel, wash the potatoes and cut them into pieces, reserving them in a container with water. Peel and chop the onion and garlic into brunoises (chopped into small squares). We cut the bread into cubes.
- In a casserole with a little oil, fry the onion and garlic and once browned, add the potatoes, sauté the whole and then add the lentils and cover with water.
- Let the whole cook for 60 minutes over low heat, adding cold water if necessary (remember that we are going to make a soup so it should be broth).
- Once the lentils are cooked, remove from the heat and pass them through the food mill. Heat four tablespoons of oil in a frying pan and fry the bread cubes.
- Sprinkle the lentils with parsley, season with salt and serve immediately, accompanying with the fried bread cubes.
