Lentil and Potato Soup Recipe

Ingredients to make Lentil and Potato Soup:

  • 250 grams of lentils
  • 100 grams of onion
  • A garlic clove
  • 400 grams of potatoes
  • 4 slices of soup bread
  • 8 tablespoons of virgin olive oil
  • a sprig of parsley
  • Salt
  • Pepper

How to make Potato Lentil Soup:

  1. Soak the lentils the night before. Peel, wash the potatoes and cut them into pieces, reserving them in a container with water. Peel and chop the onion and garlic into brunoises (chopped into small squares). We cut the bread into cubes.
  2. In a casserole with a little oil, fry the onion and garlic and once browned, add the potatoes, sauté the whole and then add the lentils and cover with water.
  3. Let the whole cook for 60 minutes over low heat, adding cold water if necessary (remember that we are going to make a soup so it should be broth).
  4. Once the lentils are cooked, remove from the heat and pass them through the food mill. Heat four tablespoons of oil in a frying pan and fry the bread cubes.
  5. Sprinkle the lentils with parsley, season with salt and serve immediately, accompanying with the fried bread cubes.
