Jigote Santiaguero Recipe

Ingredients to make Jigote Santiaguero:

  • 1/4 pound lean ground beef without skins
  • 1/4 of a medium onion
  • 2 cloves of garlic
  • 1/2 bunch of fresh coriander
  • 2 medium potatoes or 1 large
  • 1 sprig of thyme
  • 3 sweet peppers
  • 1 bunch of fresh parsley
  • Salt

How to make Jigote Santiaguero:

  1. I remember this recipe from my grandmother, I have seen Jigote Soup recipes from several Latin American countries but different from my grandmother’s and I propose it to her, she made it to get over a fever or bad digestion, very timely by the way, easy and fast of doing.
  2. In a saucepan, pour 3 cups of water and add the seasonings and salt to taste, cover and let it boil for approximately 15 minutes until obtaining a broth.
  3. Peel the potatoes and chop them into small squares, like dice, and add them to the broth incorporating half a cup of water.
  4. Let it boil with the pan covered for 15 minutes, without letting it thicken too much.
  5. Serve in a cup or deep plate in such a way that the patient can consume it in bed if necessary.
