Irish Cream of Potato and Leek Recipe

Ingredients to make Irish Leek Potato Cream:

  • 1 large leek unit
  • 4 units of potatoes
  • ½ unit of small onion
  • 1 liter of chicken or vegetable consommé
  • ¼ liter of heavy cream
  • 1 dessert spoon of butter
  • 1 pinch of salt
  • 1 pinch of pepper to taste

How to make Irish Leek Potato Cream:

  1. Cut the potatoes into small pieces, finely chop the onion and the leek into thin slices.
  2. Sauté the vegetables in the butter and add the broth.
  3. Season with salt and pepper.
  4. Boil the cream of potatoes and leek over medium heat until the potatoes soften.
  5. Blend until a thick cream remains and return to the heat. Cook the Irish potato and leek cream for 5 minutes over low heat and add the milk cream.
  6. Immediately remove from heat and serve. This cream is a typical Irish recipe and is served with Irish soda bread.
