- ½ small melon
- 1 natural yogurt
- 4 mint leaves
- 1 handful of rosemary
- 1 lemon
- 1 pinch of salt
- 1 pinch of black pepper
How to make Melon Soup with Mint and Yogurt:
- We prepare all the ingredients for this light melon and yogurt soup. From the lemon we will only use the juice. If you want a recipe to lose weight, choose a skimmed yogurt.
- Remove the seeds and chop the melon. We pour it into the blender glass together with the rest of the ingredients: the yogurt, the lemon juice, a little salt, another little black pepper and the mint leaves and some of the rosemary (we will use the rest to decorate the Soup).
- We beat the ingredients well to obtain a soup. If the melon is good, it will have enough water to make a cold soup that can be drunk in a bowl, although it is also valid to eat with a spoon.
- We already have the melon, yogurt and mint soup almost ready. We only have to decorate it with some rosemary leaves, add a little more salt if we like salty summer soup, and a little more black pepper. You will see that the combination of flavors, with the sweet and salty melon, make up a very appetizing starter, ideal to surprise family or friends at a dinner on the terrace.
