Ingredients to make Gribnoy Soup:
- 15 units of fresh mushrooms
- 5 units of Potatoes
- 2 units of Onions
- 1 unit of Carrot
- 1 bunch of Parsley
- 1 bunch of Celery Roots
- 2 bay leaves
- 1 tablespoon of flour (can also be cornstarch)
- 3 liters of water
- 1 pinch of salt
- 1 pinch of pepper
- Vegetables to taste to add color
- 1 jet of oil
How to make Gribnoy Soup:
- We start the recipe by cleaning the fresh mushrooms well. To do this, we soak them in cold water for 1-2 hours, changing the water 4 times. In case of having dried mushrooms, we will soak them in warm water and let them boil for 1 hour and a half over low heat.
- When we already have the clean mushrooms, we cut them into pieces. We also cut the carrot into thin slices and transfer both ingredients to a pot.
- Add the parsley roots, celery and water and let it boil for half an hour. Meanwhile, finely chop the onion and fry it separately.
- Cut the potatoes into small cubes and add them to the onion, along with a pinch of salt, pepper and bay leaves to flavor.
- Let cook for 15 minutes and add a cup of the broth that we had on the fire. We remove, add the flour to thicken the soup a little and add the vegetables in pieces.
- We leave a few more seconds and serve the gribnoy soup hot or cold as cut cream, whichever we like best.
