To make this beet salmorejo recipe, it is best to buy the beets already cooked to save time, but you can also buy them fresh and cook them yourself. To cook the beets, the first thing you have to do is wash them, remove the leaves and cut the stems about 10 cm from the root because that way the beets will not “bleed” when cooked. Then we put water to boil and when it boils, we add the beets directly without removing the skin so that they do not lose their sweet flavor and their particular color. In general, we will need to cook the beets between about 50 and 60 minutes so that they are well cooked, but it all depends on their size. To check if the beets are already cooked, all we have to do is prick them with a toothpick or thin knife, and if there is no resistance, it means that they are already well cooked. Then we drain them and place them in a container with cold water so that they do not continue cooking, and we can use them to continue preparing the beet salmorejo.
The sweet flavor of this tuber is very characteristic and combines wonderfully with many other ingredients. We can use it to make multiple healthy salads such as beetroot salad with rice or beetroot and quinoa salad, but also to make many other delicious dishes with a sweet touch.
