Asparagus Tart Recipe

The best thing to accompany this delicious recipe is a glass of very cold dry white wine. Perfect to whet your appetite!

So if you want to take advantage of the asparagus you have at home and make a unique and different recipe from the usual asparagus, keep reading! We tell you how to make asparagus pie in a short time and very easily.

Ingredients to make Asparagus Tart:

 For the mass:

  •  3 cups of flour (420 grams)
  •  2 tablespoons of butter
  •  2 cups of milk or water
  •  1 pinch of salt
  •  1 pinch of garlic powder

 For the filling:

  •  6 eggs
  •  200 grams of fresh or canned asparagus
  •  100 grams of grated Parmesan cheese
  •  100 grams of grated mozzarella cheese
  •  1 splash of liquid cream (heavy cream)
  •  4 tablespoons of flour
  •  1 clove garlic

How to make Asparagus Tart:

Preheat the oven to 200 ºC. In a bowl, mix the flour, a little salt, the garlic powder and the butter at room temperature. Gradually pour in the milk or hot water while kneading well so that there are no lumps.

Trick: To know that the dough is ready, press a little with your finger, when you remove it should be without the finger mark, just a little dented.

Sprinkle flour on a flat surface and roll out the dough with the help of a rolling pin. Cut the pieces you need and spread them in an ovenproof mold or a cake mold, previously oiled and floured. Reserve with a cloth on top.

Process the eggs, the cheeses, the garlic, the flour and the cream jet in the blender or food processor until you have a mixture with a texture similar to that of pancakes.

Place a few pieces of asparagus on top of the dough that you had reserved and press lightly so that they remain fixed on the bottom.

Tip: If you prefer to use fresh asparagus, cut off the lower ends and fry for about 10 minutes with a little salt and pepper. They are ready for the stuffing!

Pour the processed mixture on top of the dough. Finally, decorate the asparagus cake with the heads of the asparagus and the rest of the ones that you have left over.

Tip: You can sprinkle a little Parmesan cheese on top before putting the mold in the oven to make an asparagus and cheese tart with an exquisite gratin.

Bake for about 20-25 minutes or until the dough is ready. Check it by burying a stick or knife in the center, it should come out without any remains of the dough.

You can serve it hot with a little salad, you can also eat it warm, since the mild flavor of asparagus does not change with temperature.
