Dry Soup Recipe – south of Lima

Ingredients to make Sopa Seca – south of Lima:

  • 1 kg of thin noodles
  • 3/4 kg of Chicken or Beef meat in squares
  • 3 diced onions
  • 3 large tomatoes peeled without seeds to the feather
  • 3 grated carrots
  • 1/4 kg of ground Ají Colorado (panca)
  • 8 cups of water
  • 1 tablespoon chopped parsley
  • 1 tablespoon chopped basil
  • 1 spoon of sugar
  • garlic
  • Salt
  • Pepper
  • oil

How to make Sopa Seca – south of Lima:

  1. In a large pot, fry the onion with garlic, salt and pepper with a little oil until it turns transparent, add the red pepper and basil, add the carrot and tomato, move with a wooden spoon, add the cubes of meat polo or beef, add the parsley and cover the pot until water comes out.
  2. Once the meat is cooked add the water and the noodles cut in two with a little salt, cook until al dente.
  3. Before serving sprinkle the sugar and move.
  4. Serve hot immediately.
  5. Have all the ingredients prepared before cooking.
