Ingredients to make Dominican Sancocho:
- 1 unit of chopped chicken
- 6 units of pork chops
- 220 grams of minced meat
- 220 grams of Yuca chopped
- 2 units of potatoes
- 4 units of Banana
- 1 yam unit
- 1 unit of Yautia
- ¼ unit of Auyama
- 2 units of Cob
How to make Dominican Sancocho:

- 1 large green pepper, chopped small 1/2 sprig of parsley 2 small red onions, chopped 2 cloves of garlic, crushed 2 or 3 coriander leaves 2 chicken broth 1 beef broth 2 tablespoons vinegar 1 tablespoon Worcestershire sauce In a large pot, cook put a little oil (2 1/2 tablespoons) and a little sugar (1/2 teaspoon) over high heat.
- The meat is thrown all together so that it softens a little and browns.
- Cover and leave until cooked (20-30 mins approx.), stirring from time to time, until much of the liquid is consumed.
- The meat is removed and set aside.
- If the chicken is broken, it is removed separately so that it does not continue to break apart and then it is added at the end.
- If the meat is whole, it doesn’t matter, better.
- In the same cauldron that the meat was boiled, add water (up to half the cauldron) with the rest of the liquid and let it boil; Add the groceries and the vegetables to season on top, cover and let it boil quite a bit (about 40 min. approx.) or until the groceries are cooked.
- Then add the meat and a spoonful of Worcestershire sauce.
- Missing like 10 min. for the salcocho to be, add the vinegar (about 2 tablespoons).
- Salt is tested and added if needed.
- If you want the plantain buns, something very typical Dominican (see below), you can pour them on top and let them boil until the sancocho is ready.
- Banana roll: The raw banana is peeled and finely guaya.
- Add a pinch of salt and form balls with your hand about an inch in diameter.
- Cornmeal buns: the flour is mixed with a little salted milk and a teaspoon of butter.
- They are formed just like the banana buns. This dish is accompanied with white rice and avocado.
