Ingredients to make Cream Of Celery With Salmon:
- 1 bunch of celery with leaves
- 2 large leeks
- 2 potatoes
- 2 carrots
- 2 tablespoons sunflower oil
- 5g butter
- lemon juice
- 1 liter of vegetable broth
- 1 egg yolk
- 50 ml of liquid cream
- salt and white pepper

- 100ml whipped cream
- 2 slices of smoked salmon
- fresh chives stems
- lemon or lime zest
How to make CREAM OF CELERY WITH SALMON:
- Cut the end of the celery and separate the stems, wash and dry.
- Cut into medium pieces.
- Wash the leeks, discarding the damaged leaves and roots and cut the rest (including the green part) evenly.
- Peel and slice the potatoes; Scrape the carrots and cut them into thick slices.
- In a wide saucepan, put the vegetables with the oil and sauté them with a knob of butter, so that it melts slowly, when they begin to soften and release the water, add the broth, cover and leave to cook for 40 minutes.
