There’s nothing like homemade onion soup! In Spain it is a very typical dish, which my grandmother has always prepared for dinner in winter.
It is a broth that was traditionally prepared with ‘poor’ ingredients, such as onion, garlic and bread from previous days. Egg Onion Soup can be made by boiling the egg directly in the broth or by preparing the egg separately.
Ingredients to make onion soup with poached egg:
- 2 units of Onion
- 1 clove garlic
- 3 slices of hard bread
- 1 unit of Egg
- For the vegetable broth
- 1 unit of Leek
- 1 unit of Carrot
- 1 piece of Celery
How to make Poached Egg Onion Soup:
- We gather all the ingredients to prepare the onion soup with poached egg.
- If you don’t have vegetable broth at home, we are going to prepare a basic vegetable broth with leek, peeled carrot and celery. Put all the ingredients in a pot with water and a little salt. We let it boil for at least 20 minutes.
- In another pot, put a little olive oil and brown the filleted garlic together with the julienned onion. We put a little salt and let them cook for 10 minutes over low heat.
- Once the vegetable broth is prepared, strain it. Add the vegetable broth to the pot where we have fried the onions and garlic. Let the onion soup cook for 20 minutes.
- Cut the bread into slices and add it to the soup. We remove from the fire.
- Trick: It is better if the bread is from previous days.
- On the other hand, we prepare the poached egg. To do this, we put a bit of transparent paper over a cup or glass, crack the egg, put a little salt and close it as if it were a small package. Let the poached egg cook in boiling water for 4 minutes.

- At the time of serving, we put the broth very hot in the plate and immediately we place our egg in the center, if you want you can add a little cheese on top.
