Salmorejo is a typical dish from the gastronomy of southern Spain, specifically from Córdoba, in Andalusia. It is a cold tomato and garlic soup that is thickened with bread and is really delicious, especially in those summer months when you do not feel like copious or hot meals.
The version of salmorejo that we present is a different point and very refreshing: it is a recipe for apple salmorejo.
You can have this salmorejo for dinner as a single dish or you can put it as a starter in a summer meal. Best of all is how easy it is to prepare, there is no cooking involved, everything is consumed raw and, therefore, all the nutritional properties of the ingredients are preserved, which makes this dish a very healthy recipe. Ingredients to make Apple Salmorejo:
- 6 ripe tomatoes
- 2 cloves of garlic
- 2 apples
- 1 slice of country bread
- 1 splash of extra virgin olive oil
- 1 splash of red wine vinegar
- 1 pinch of salt
- 2 eggs
- 1 jet of water
How to make Apple Salmorejo:
- Peel the tomatoes, the garlic and the apples and cut them into small pieces to facilitate later grinding. Place them in a container to crush them and add the loaf of bread moistened with the extra virgin olive oil, the vinegar, the water and the salt.
- Blend all the ingredients with a hand blender or, if you have one, with a food processor. There should be a thick texture.
- Once crushed, cover it and store it in the fridge for a minimum of 2 hours.
- Tip: it is important that the salmorejo is very cold
- Meanwhile, prepare the hard-boiled eggs. Cook those 10 minutes in boiling water. When they are ready, cool them with water, peel them and reserve.
- Tip: many recipes include the hard-boiled egg with the vegetables and crush it to give it texture. If you want you can try it like this, it is one more option.
- When the apple salmorejo is cold, serve it in a bowl and decorate it with the hard-boiled egg. Add a few flakes of salt and accompany it with toasted bread. Now all that remains is to enjoy this dish that is so humble, simple and at the same time so good. Bon Appetite!
