Ingredients to make country soup:

  • 2 green onions
  • 1 leek
  • 100g mushrooms
  • 2 tomatoes
  • 100g noodles
  • 4 slices of bread
  • 2 tablespoons concentrated tomato puree
  • 5 liters of vegetable broth
  • Salt
  • Water
  • Oil
  • Chopped parsley

How to make country soup:

  1. Make a few cuts along the tomatoes and put them to blanch for a few seconds in a saucepan with boiling water. Remove them from the water and remove the skin. Chop them and reserve.
  2. Wash and chop the leek and green onions. Sauté these vegetables in a saucepan with a little oil. Add the chopped tomatoes and sliced ​​mushrooms.
  3. Pour the broth and add the tomato puree. Let cook approximately 15 minutes.
  4. While the soup cooks, remove the foam that forms on the surface.
  5. Cook the noodles in the soup for about 10 minutes. Season with salt. Accompany with the slices of bread fried in oil and sprinkled with chopped parsley. It serves.
