Ingredients to make Colombian Lentil Soup:

  • 200 grams of dried lentils
  • 1 unit of Onion
  • 2 units of Tomato
  • 2 units of sweet potato
  • 2 bay leaves
  • 1 teaspoon Thyme
  • 1 pinch of salt and pepper

How to make Colombian Lentil Soup:

  1. Pre-list all the ingredients to prepare this delicious lentil soup.
  2. Wash the onion and tomato with cold water and chop into medium squares to make a stew.
  3. Heat a large skillet over medium heat and add a little sunflower oil. Sauté the onion and tomato. Add a clove of finely chopped garlic to give the stew more flavor. While we cook our stew, in a large pot cook the lentils with a lot of water.
  4. Once we have the stew ready, add it to the pot where we have the lentils cooking. Also add the bay leaf and dried thyme. Let cook for approximately 30 minutes. Ideally, lentil soup should be watery, with a consistency that is more liquid than thick.
  5. Serve the Colombian lentil soup and finish the dish with some grated cheese or a slice of mozzarella cheese and enjoy!
