Ingredients to make Mexican Chicken Caldo with Rice:

  • 4 pieces of chicken
  • ½ piece of Onion
  • 1 clove garlic
  • 1 branch of mint
  • 2 pieces of red tomato
  • 1 cup of white rice
  • 1 pinch of salt
  • 1 piece of pepper
  • 1 tablespoon of powdered chicken consomme

How to make Mexican Chicken Caldo with Rice:

  • In the following image you can see the ingredients that we will need to prepare this delicious chicken broth with Mexican rice.
  • To begin us must cook the chicken pieces in enough boiling water, add a piece of onion and a clove of garlic, and also add several mint leaves and a pinch of salt. Let the chicken cook for 15 minutes over high heat.
  • Meanwhile, take the rice, rinse it under running water and place it in a container with water to soak for 5 minutes.
  • Once the chicken broth boils, add the rice and let them cook together for 10 more minutes.
  • On the other hand, we take the red tomatoes and cut them into large pieces, as we can see in the following image.
  • Once the ten minutes of cooking the rice together with the chicken have passed, add the pieces of red tomato and let everything cook together for another 10 minutes. We also add the tablespoon of powdered chicken consommé and a pinch of pepper and salt.
  • After this time we verify that everything is well cooked, that the rice is very soft and that the red tomato is ready and remove from the heat.
