Cold Cucumber and Mint Soup Recipe

Ingredients to make Cold Cucumber Mint Soup:

  • 1/2 kg cucumber(s)
  • 1/2 garlic clove(s), pressed
  • 5 chives
  • 2 cup(s) chicken broth
  • 1 plain yogurt
  • 1/2 cup(s) cream
  • 1/2 lemon(s) its juice
  • 5 mint leaf(s)
  • Salt and pepper to taste

How to make Cold Cucumber Mint Soup:

  1. 1Cut the tips of the cucumbers and peel.
  2. Cut lengthwise and remove the seeds.
  3. Chop the green and white chives.
  4. Chop the mint leaves. Blend the cucumbers with the broth.
  5. Add the yoghurt, cream and lemon juice.
  6. Blend until creamy.
  7. Pour into a bowl.
  8. Add the mint, stir and refrigerate until serving time.
