Ingredients to make Cold Apple Soup:
- For 4 people:
- 4 medium Golden apples, peeled, cored, and quartered
- 1 cup of dry or sweet white wine (according to your taste)
- 1 cup of apple juice
- 2 tablespoons of sugar
- 1 cinnamon stick
- 3 slices of ginger
- 2 cups of beef stock
- 1/2 cup of sour cream or milk jocoque
- 12 slices of chopped chives.
How to make Cold Apple Soup:
- In a suitable container, put the apples with the white wine and apple juice, as well as the sugar, cinnamon and ginger over medium heat.
- When the apple is soft, remove the portion of cinnamon and ginger.
- Then blend the apple mixture with the beef stock and the sour cream, and let it cool.
- Serve in individual portions garnishing each plate with chives.
