Ingredients to make onion soup:
- 3 tablespoons olive oil
- 6 large red or white onions, thinly sliced
- 1 spoon of sugar
- 1 teaspoon minced oregano
- 1/2 teaspoon cumin powder
- ¼ teaspoon allspice
- ¼ ground cinnamon
- ½ cup red wine vinegar
- The juice of 1 orange
- 1 and 1/2 liters of chicken broth
- Salt
- black pepper to taste
How to make onion soup:
- In a large pot, with the lid, heat the oil, add the onions and cook, stirring with a wooden spoon, until they turn transparent.
- Sprinkle with the sugar, oregano, parsley, cumin, allspice, and cinnamon, and cook about 20 minutes, stirring occasionally.
- Add the vinegar and orange juice, and cook 5 more minutes.
- Add the broth and bring to a boil over moderate heat.
- Cover and lower the heat so that the soup continues to simmer until it reduces and thickens.
- Add the salt and pepper.
