Caribbean Soup Recipe

Ingredients to make Caribbean Soup:

  • 1 leek cut into slices
  • 1 garlic clove minced
  • 2 tablespoons of oil
  • 2 1/2 liters of water
  • 2 cups of peeled and chopped vegetables: carrots, peas, green beans, turnips, etc.
  • 1/2 cup corn kernels
  • 1 sprig of parsley
  • 2 cloves
  • 3 fat peppers
  • 1 bay leaf
  • 1/2 cup long grain rice
  • 2 cups black beans, cooked and drained
  • 1/2 Cup of tomato peeled and chopped, without seeds
  • 4 tablespoons of powdered vegetable consommé
  • Tabasco sauce to taste

How to make Caribbean Soup:

1.Fry the leek and garlic in hot oil, add 2 1/2 liters of water and cook the other ingredients, except the beans and the tomato, season with the consommé.

2.When everything is cooked and still boiling, add the tomato and beans.

3.Serve hot with Tabasco sauce to taste.
