Ingredients to make Green or Egg Broth:
- 1 1/2 liters Water
- 1 pc. onion
- 5 u. egg
- 2 or 3 clove garlic
- 1 pc. tomatoes
- Saffron
- 2 tablespoons oil
- 1 bunch chopped parsley
- Salt to taste)
- 1kg potato
- 2 or 3 pieces of bread (from the previous day)
How to make Green or Egg Broth:
1.Put the water, a little olive oil, the julienned onion, the tomato, the bunch of chopped parsley, and the salt in a pot.
2.Let it boil for a long time, add a few strands of saffron. One of the eggs and some pieces of bread are fried. Once fried, mash in the mortar together with the garlic cloves.
3.Add to the stew, letting it continue to simmer. Add some stew per kilo of potatoes, peeled and cut in half or in quarters if they are large.
4.When the potatoes are cooked, break, one egg per person, into the pot and turn off the heat.
