I made this vegetable quiche for some friends and it was a hit. It is ideal when you have to bring a prepared dish to an informal meal with a lot of people, because you can prepare it in advance and eat it without the need for cutlery. The quiche includes various vegetables cooked in the style of a ratatouille, which are combined with cheese. Stay and discover the step by step to cook it. It turns out delicious!
Ingredients to make Vegetable Quiche:
- 1 unit of breeze dough
- 1 unit of Eggplant
- 1 unit of Zucchini
- 2 units of green pepper
- 1 unit of Carrot
- ½ unit of Onion
- 2 units of Egg
- 100 grams of blue cheese
- 100 grams of Emmental
- ½ unit of Goat roller
- 1 jet of oil
- 1 pinch of salt
- 200 milliliters of liquid cream
How to make Vegetable Quiche:
- Here we have the ingredients for this cheesy vegetable quiche. You can prepare the dough for the base of the quiche following this recipe, or opt for a ready-made base, the Brisa variant. As vegetables, I have opted for a combination similar to a ratatouille: aubergine, courgette, carrot, onion and green pepper. You can eliminate or substitute vegetables that you do not have at home. The cheeses are also optional, but with this combination of goat cheese, blue cheese and emmental it is delicious.
- To prepare this vegetarian quiche we start with the vegetables. We wash them and cut them all into small cubes. In a saucepan, heat a little oil and first brown the onion and carrot.
- After a few minutes of cooking, add the rest of the vegetables: the aubergine, the courgette and the green pepper, adding a little more oil if necessary. Cook everything over medium heat for at least 10 or 15 minutes, stirring occasionally, until the vegetables are soft.
- Trick: It is time to preheat the oven to 190ºC.
- In a large bowl, beat the eggs and add the cheeses, chopped or shredded, and stir well.
- The vegetables of our quiche with cheese will already be done. Drain excess oil and add to the bowl of egg and cheese. Salt to taste and stir well.
- We line an ovenproof mold with baking paper and spread the short crust pastry on top, which is ideal for quiches. Pierce the base with a fork at various points, and then pour in the egg, cheese and vegetable mixture.
- Bake the vegetable quiche at 190ºC between 40 and 45 minutes, with heat up and down, and controlling during the last few minutes to prevent it from browning too much.
- This vegetarian quiche is ideal as an appetizer for a barbecue with friends, or for a picnic in the park. Don’t forget the bottle of wine to accompany it!
