Ingredients to make Minorcan Oliaigua:
- 5 units of ripe tomatoes
- 1½ units of Onion
- 2 cloves of garlic
- 1 bay leaf
- 2 units of green peppers
- 3 tablespoons of olive oil
- 1 pinch of salt
- 1 piece of Bread from the day before
- 1 pinch of parsley
How to make Minorcan Oliaigua:
- poached, add the chopped pepper, bay leaf and parsley to flavor the Spanish soup. Peel the tomatoes, cut them into pieces and, when everything is poached, add them to the pan. Reduce the heat to a minimum and let it cook.
- When the soup acquires a jam-like appearance, add salt and water, let it boil for a few minutes. Meanwhile, the bread is cut and placed on plates. The Menorcan soup is served on the bread so that it soaks well.
- When cooking the soup, keep in mind that the longer the vegetables are cooked over low heat, the better, because the result will be a soup with a very juicy jam texture.
