Ingredients to make light vegetable soup:
- 4 carrots
- 2 potatoes
- 1 small pumpkin
- 2 sweet potatoes
- 4 corn
- 100 grams chickpeas
- 2 leeks
- 2 green onions
- 1 stick of celery
- sea salt to taste
- 1 tablespoon olive oil
How to make light vegetable soup:
- Cut the vegetables into very small squares, except the corn that will be cooked whole.
- Put water to boil in ½ a large pot, when it is boiling, place the carrots first, after 10 minutes the potatoes, pumpkin and sweet potatoes, after 10 minutes the other ingredients except salt.
- Cook over low heat for approximately 45 minutes, so that the soup takes consistency, when it is ready, turn off the heat, add the oil and salt.
