Beet Carpaccio with Goat Cheese Recipe

Beetroot or beta vulgaris is a root that is known by different names such as beetroot, white chard or beetroot. Leaving aside the multitude of vitamins and minerals it has (vitamin C, iron, folic acid, etc.), beetroot is a food that helps us reduce hypertension naturally.

Ingredients to make Beet Carpaccio with Goat Cheese:

  • 1 unit of cooked beetroot
  • 4 slices of goat cheese
  • 2 tablespoons grated cured cheese

For the dressing

  • 2 tablespoons of red fruits
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons of olive oil
  • 1 pinch of salt

How to make Beet Carpaccio with Goat Cheese:

We gather all the ingredients to make the beet Carpaccio with goat cheese. Slice the cooked beet very finely. As we have mentioned on other occasions, you can buy beetroot already cooked or naturally, and cook it yourself.

On the other hand, we prepare the red fruit dressing: mix 2 tablespoons of red fruit in its juice with the apple cider vinegar, a pinch of salt and the olive oil. Mix and reserve.

Grate a little cured cheese and put a small pile on a frying pan over high heat. When it is roasted on one side, we turn it over with the help of a spatula. We repeat the operation to create two cheese tiles.

Cut a few slices of goat cheese and add them to the beetroot Carpaccio. We place the cured cheese tiles in the center, as shown in the image. Season the beet Carpaccio with goat cheese, adding a little of the red fruit vinaigrette.
