How to make aubergine puree with Thermomix:
- Before starting to prepare the aubergine puree with Thermomix, we leave all the ingredients ready. To do this, peel the carrot and chop it, peel and also dice the aubergine and the leek into medium pieces. Finally, peel the tomato and remove the stem.
- If you want to use this aubergine puree to lose weight, we recommend eliminating the cheese from the recipe or replacing it with a light one.
- Now that we have everything ready, let’s get started! To do this, place the leek in the Thermomix glass and chop it at speed 5 for 4 seconds. Then, add the oil and cook for 10 more minutes, at spoon speed and 100 ºC.
- Add the tomato and continue cooking for 2 minutes, maintaining the same speed and temperature. If you do not have natural tomato, you can add crushed tomato directly.
- Add the eggplant and carrot to the glass and let everything cook for 5 minutes, at the same speed and temperature. Then, we pour water to cover the ingredients, add salt to taste and program the Thermomix for 10 minutes at speed 2.5 and varoma temperature.
- Tip: If after some time you think that the purée has become too thick, you can add a little more water.
- To finish the aubergine purée with Thermomix, we can add the cheese and the parsley and blend everything until we get a homogeneous and smooth mixture. Especially if children are going to eat it, the cheese will give it a milder flavor and will make it easier for them to consume it
